Happy New Year!

Headed to Vegas tomorrow to ring in the new year with my sister, brother-in-law and friends Stefani and David!
I am pretty sure I'll be partying it up with Heidi and Spencer (AKA: Speidi), Paris, Carmen Elektra, Britney and Fergie. Or better yet maybe I'll run into them at In-N-Out Burger!

I am sure there will be stories to share.....but as you know WHAT HAPPENS IN VEGAS STAYS IN VEGAS!!!!

Shrimp Tacos with Spicey Cream Sauce

Tired of holiday leftovers?
Are the leftovers all gone?
Here is a tasty, somewhat healthy recipe for shrimp tacos...courtesy of my new Southern Living Cookbook that Santa left for me!


I actually had everything in the cabinets except for shrimp and sour cream!

Ingredients
1 (16-ounce) container nonfat sour cream
2 teaspoons chili powder, divided
1 teaspoon ground cumin, divided
3/4 teaspoon ground red pepper, divided
3/4 teaspoon salt, divided
1/4 teaspoon ground cinnamon
1 1/2 cups water
1 pound unpeeled, medium-size fresh shrimp
3 tablespoons orange juice
2 garlic cloves
2 teaspoons olive oil
1 avocado, chopped
8 (8-inch) corn tortillas, warmed


Preparation
Whisk together sour cream, 1 teaspoon chili powder, 1/2 teaspoon cumin, 1/2 teaspoon red pepper, 1/4 teaspoon salt, and cinnamon. Add 1 1/2 cups water, stirring until smooth. Cover and chill until ready to serve.
Peel shrimp, and devein, if desired; chop. Combine remaining 1 teaspoon chili powder, 1/2 teaspoon cumin, 1/4 teaspoon red pepper, and 1/2 teaspoon salt in a shallow dish or heavy-duty zip-top plastic bag; add orange juice and shrimp, turning to coat. Cover or seal, and chill 15 minutes. Remove shrimp from marinade, discarding marinade.
Sauté garlic in hot olive oil in a large skillet over medium-high heat 2 to 3 minutes. Add shrimp, and cook 5 minutes or just until shrimp turn pink. Serve with sour cream mixture and avocado in warm tortillas.



For dessert I made these delicious gingerbread souffles with lemon cream sauce! Heavenly!

Poor Giants

So we ventured out to Texas Stadium at 5pm on Sunday night. We sat in traffic for about an hour. Texas Stadium is known for the awful traffic. We went to a game a few years ago and didn't get home until 1 am, no lie! We were nervous about going again but we had to see the Giants kick some Cowboy b-u-t-t!
We finally got some tickets for face value and we were half way through the battle..now we just had to park the car! We sat in traffic for about another 45 minutes to an hour and we missed kick off. ;(
Once we parked we ran our arses to the stadium with people yelling very mean things about our Giants t-shirts. We grabbed a beer and got to our seats and only missed a few minutes of the 1st quarter. We lucked out and got really awesome seats.

Too bad the game SUCKED! Eli couldn't throw a ball for nothing and those other guys couldn't catch for nothing. It was an awful game for the New York Giants. I am sad they lost...but they are already in the playoffs unlike the Cowboys.


One of the comments that was yelled to us while running to the stadium..


"Giants? Where did you get that shirt?"


Mr. Fitz yells out "At the Superbowl!"

Paris or San Antonio?

I hope everyone had a great Thanksgiving. I spent time in San Antonio with my family. It was nice and relaxing.



Last year I was in Paris. France. Not Texas.
They are actually very similar places. Let me tell you....


They have tall, famous buildings.














They have superb cuisine and adult beverages.




























Okay, fashion is questionable...













As is the art.















But I'll take San Antonio over Paris as long as this guy is there!

Stupid Economy!

I left work early today and was excited to watch Oprah's Favorite Things Gift Show. Oh, what could she possibly come up with this year! Well I'll tell you....NOTHING!

The show is about being thrifty this year and giving gifts from the heart. Bleh!
Yeah, like she knows how to be thrifty!

I would be so mad if I was in the audience and didn't get a cool gift. Last year she gave away a talking refrigerator.....this year a holiday CD and recipes that you can find on oprah.com.

Lame.

It's beginning to look a lot like Christmas!

It's beginning to look a lot like Christmas!
How do I know this you say?

I know that it is Christmas time because....

I get one million catalogs a day beginning in early November, even random ones that I didn't sign up for.
AND I actually read through all of them. This is what I got in the mail yesterday. Yes, all of these in one day!
















Starbucks cup design changes during the holidays. When I see a red holiday cup I know it's time to start shopping!
LOVE the peppermint mocha during the winter.




















I love these mint candies! They are so minty and chewy.
I bought some a few days ago and have eaten half the bag!
