3 Posts in a Week.....Watch Out!!!

So I was supposed to start my diet/eating better/work out routine on Monday...but instead I made this goodness instead. OMG, ladies this cake is sooo good. Stop what you are doing and go make it RIGHT NOW!!!
Everytime I walk by the kitchen I sneak a bite!

Coca Cola Chocolate Pan Cake
Ingredients
2 cups all-purpose flour
2 cups granulate sugar
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups miniature marshmallows
1 cup (2 sticks) butter or margarine, cut up
1 cup Coca Cola
1/4 cup unsweetened cocoa
1/2 cup buttermilk
2 large eggs, well beaten
1 teaspoon vanilla extract

Frosting
1/2 cup (1 stick) butter or margarine, cut up
1/3 cup Coca Cola
1/4 cup unsweetened cocoa
1 teaspoon vanilla extract
1 package (16 ounces) confectioners' sugar

Preheat over to 350. Grease 9x13 glass baking dish. In large bowl, stir together flour, sugar, baking soda and salt. In 2-quart saucepan, heat marshmallows, butter Coca Cola, cocoa over medium-high heat until bubbles form around edge of pan. Remove from heat; continue stirring until marshmallows melt.

Pour marshmallow mixture over flour mixture; with wire whisk, stir until well combined. Whisk in buttermilk, eggs and vanilla until blended. Pour batter into prepared pan. Bake 40 minutes or until toothpick inserted in center of cake comes out clean. Transfer to wire rack.

Meanwhile, prepare frosting': In 1-quart saucepan, heat butter, Coca Cola and cocoa to boiling over medium-high heat. Remove saucepan from heat. Add vanilla and stir until butter melts. Place confectioners' sugar in medium bowl. Pour hot butter mixture over sugar. With wire whisk, stir until well combined. Set aside until ready to use.

Stir frosting well; spread over top of hot cake immediately after removing from oven. Cool in pan on wire rack. ENJOY

Babies Everywhere

I have been super busy sending flowers and edible arrangements to friends with new babes. This is all of the new babies in April. They are mostly friends and co-workers and some friend of friends that I don't really know but thought I would add to the list b/c I can't believe all the babies this month!

Claire (the baby momma was on bedrest for over half the pregnancy I am talking only getting out of bed to pee/shower and go to doctor appts. She had to lay on her side the entire time...and then she got an infection after the c-section and was in the hospital for another 4 days after coming home...Claire might be an only child!)

RJ
Evy
Elliott (girl)
Leyton (boy)
Kellan (Casey's new nephew)

I feel like there was more...but my texts this month will be outrageous after getting all the updates for the births! It's been fun thinking back how just 6 months ago I was in thier shoes. I keep looking back at pics of Liam and he looked so different.

Side Note: Dee...if you'r reading...I can't comment on your blog...anyone else have this prob? I can't see the "code word". I don't have this problem on other blogs?

I know, I know

Easter was FOR-EVAH ago...but I just gots to share some cutie pictures.
When I was a kid my parents would have all our friends and family over for an Easter Egg Hunt. My cousin would dress up in a bunny suit and everything.
Well, now it's our turn to host!
So the Saturday before Easter in San Antonio we hosted an Easter Egg Hunt for all of our friends and family. The husbands went early to hide all the eggs at a nearby park. We followed soon after. We even had the Easter Bunny there too. We had about 50 people show up. It was soo fun! Good memories.
Here are a few pics!

I ain't skeerd of no bunny!

Baby Carter and Ethan

Of course, we squeezed in some family photos.
Isn't the cutest picture of my boys!!!

6 months

My sweet baby boy turned 6 months last week.

I can't hardly believe it. I know everyone warned me how quickly it goes but now I really know...it goes FAST!! He had his 6 month appointment and he's really tall for his age, 80th percentile. He's right in the middle for weight and head size. He got two shots and cried for less that 5 seconds. As soon as I picked him up he was laughing and smiling at the nurse. He's got 7 teeth! He's been really good. We went to brunch on Saturday and he sat there quietly for over an hour! We've been trying to take advantage of him being "still" and going out to eat. Before long he'll be mobile and will not want to sit still for long!
Still sleeping through the night 7pm-7am and takes two 2-hour naps during the day.
Look how big he's gotten. I still can't believe how much he grew between 1-2 months! He has no hair in month 3!

hello!!!!

Okay..it's been a crazy month to say the least. Here is a small recap with a few random thoughts thrown in.

  • We've lived in our new house for a month now. It's coming together nicely...but slowly. I am ready for the pool to warm up.
  • Speaking of pool...we have already utilized the home warranty TWICE. Leak in the pool pump and our garage door had a short in it. It was opening by itself in the middle of the night!!! SCARY!!!!
  • We had a great Easter and I am hoping to get a post in with some GREAT family pictures.
  • Liam is growing like a weed. My sweet baby will be 6 months old next week. I need to start planning his first birthday pronto!
  • My 6 month old baby has 6 teeth with one peeking out. I have friends with 1 year old kids that don't have 3 teeth much less 6!!!
  • Because of these 6 teeth EVERYTHING goes straight to the mouth including my face. He grabs my face and pulls his face toward it! It's so cute!
  • Headed to the Main Street Arts Festival this afternoon in Fort Worth. Also, taking the kiddo to Daddy's office so we can show him off. All the ladies at his office have been asking for him! ;)
  • I have been cooking more now that we are settled and it's glorious. I'll post recipes soon.
  • Going back to San Antonio in two weeks for FIESTA. Those of you that are not familiar...it's like Mardi Gras minus the shirt lifting part. It's basically a month long celebration full of food, booze and parades. Can't wait!!!
  • That's all for now. I am going to do my best to post more often...I promise.
  • In the meantime I'll leave you with this little nugget of goodness. (Please ignore me screaming "BOUNCE!")
