In the news TWICE!!

In February 2008 my parents were features in a Valentine's Day artical in the San Antonio Express News. The link is no loner available but I scanned the article. I hope you can read it.

My mom was featured again last week in the food section. They are doing a segment called Cooks and Cocinas. Here is the link.
She's becoming quite the celebrity!

For Sass

Check out the comments from Sass in this post. They are the last two listed.

Sass, this is a Crockpot. Also known as a slowcooker.

Here is another Crockpot Recipe I made last week. I got it from Live. Love. Eat.

(I hope it's okay that I re-post her recipe...not sure on all the "rules" of that.)

Sweet Shredded Pork

Put a pork roast in your crock pot. Add 2 cups of salsa, 1 can of coke (not diet) & 1 cup of brown sugar. Cook on low 8-10 hours. Shred with forks in crockpot just before serving & remove any bones. Place some shredded mozzarella on roll, pour some meat on top drizzling a little extra sauce, maybe some more cheese. I put mine in a tortilla with cheese and avacado...delish.

Who is Bill?

A few of ya'll have asked "Who is Bill?" Well, Bill is actually Liam.

When Liam was born a few family members were slightly confused about the name Liam. They either hadn't heard it before or were just confused in general. This is how one of the conversations went down:

Me: "It's like WilLIAM. The last four letters in William. Liam is Irish for William."
Family: "So what are you going to call him?
Me: "Liam, we are going to call him Liam."
Family: "Are you going to call him Bill?"
Me: "No, his name is Liam, we are going to call him Liam."

I mistakenly relayed this conversation to Casey and Coco and they both agreed he should be called Bill from now on. Thanks girls, thanks a lot.

That's what you get for peeing on yourself.

2am.

Changing Liam's diaper.

Golden shower.

Pee on his face.

Clean face with cold wipe.

Which he doesn't like.

Crying, crying, waaahh, waahh

I tell him "That's what you get for peeing on yourself"

Easy Santa Fe Chicken

Easy Crockpot Recipe!

INGREDIENTS
1 15 oz can black beans -- rinsed and drained
2 15.25 oz cans whole kernel corn -- drained
1 cup bottled thick and chunky salsa
5 or 6 skinless boneless chicken breasts -- (can use frozen)
1 8 oz brick cream cheese -- low fat is fine
1 cup shredded cheddar cheese

DIRECTIONS
In a 3.5 or 4 quart electric slow cooker, mix together the beans, corn, and 1/2 cup salsa. Top with the chicken breasts, then pour the remaining salsa over the chicken.Cover and cook on the high heat setting 2.5-3 hours, or until the chicken is tender and white throughout; do not overcook or the chicken will toughen.Remove the chicken and cut into bite sized pieces. Add back to the slow cooker.Add the cream cheese (cut into cubes to melt faster), and turn slow cooker to high heat. Heat until cream cheese melts and blends into sauce.Serve over rice. Top with shredded cheese.
