I am going to do my best to share some recipes with ya'll every Sunday night.


That is when I plan my meals for the week. I might have to switch my grocery day though to either VERY early Sunday or maybe Sat. morning. Sunday afternoon was a zoo. People were running into each other, it was crazy! But, luckily I had a litte buddy along for the ride to keep me company.
This week we're having
Planked Salmon with Honey-Balsamic Glaze
with Marinated Grilled Vegetables and for dessert Grilled Banana Splits
Salisbury Steak with Mashed Potatoes and Sweet Green Peas
Salmon again sometime...bought a little too much
and then on Friday make/build your own pizza!!
Here is the recipe for Salmon. Vegetables and Dessert below. We had this on Sunday night! It was really good!!!
Marinated Grilled Vegetables
(Southern Living)
10 large fresh mushrooms
2 zucchini
2 yellow squash
1 green bell pepper
1 red bell pepper
1/2 cup balsamic vinegar
2 tablespoons olive oil
3 garlic cloves, minced
1 teaspoon salt
2 teaspoons minced fresh thyme
1 teaspoon freshly ground pepper
Vegetable cooking spray
Remove mushroom stems, and discard. Cut zucchini and yellow squash into 1/2 inch slice. Cut bell peppers into 1-inch strips. Combine vegetables, vinegar, and next 5 ingredients in a large zip-top freezer bag; seal and chill 30 minutes. Remove vegetables with a slotted spoon, reserving marinade. Coat a grill wok with cooking spray; arrange vegetables in basket. Grill, covered with grill lid, over medium heat (300 to 350) 12 minutes on each side or until crip-tender. Place vegetables in a large bowl; drizzle with served marinade, tossing to coat.
I put vegetables in foil instead and didn't use the reserve marinade b/c I was too lazy to go back in the house to get it! We ate it straight out of the foil! I halved the recipe.
Grilled Banana Splits
(Southern Living)
4 firm, ripe bananas, unpeeled
1/4 cup miniature marshmallows
1/4 cup chuny peanut butter
Cut a lengthwise slit to, but not through, bottom of each banana. Stuff banana slit with 1 tablespoon each of marshmallows, chocolate morsels, and peanut butter. Place each banana, bottom side down, on 4 squares of aluminum foil folded to resemble a boat. Grill bananas, with grill lid, over medium coal (300 to 350) 5 minutes or until chocolate morsels melt.
I just used one banana and we cut in half. I also served with ice cream.

Thanks! We try and eat a good bit of salmon but I have to encrust it for Brad to enjoy it.

Looks good. I have a subscription to Southern Living and haven't seen that veggie recipe. Definitely going to try all of them. Liam is adorable!
We eat salmon once a week. Love it. So easy and so much to do with it.
